Bagasse 
The cane fibre remaining after the milling process. Bagasse is used as boiler fuel to generate steam and electricity.

BSES 
Bureau of Sugar Experiment Stations is the research arm of the sugar cane industry.

BST 
Bulk sugar terminals are the port-based infrastructure owned by Sugar Terminals Limited.

Cane Sugar 
A carbohydrate having the chemical formula C12H22O11 and comprising two sugars-glucose and fructose.

CCS 
Commercial Cane Sugar is an empirical measure of recoverable sugar in cane expressed as a percentage.

Ethanol 
Alcohol distilled from fermented molasses (or other sources).

Evaporator 
A process vessel in which clarified juice is boiled to create syrup.

Fibre 
Fibrous matter in the cane plant. The milling process ruptures the fibre cells and releases the juice.

Filter Mud 
Insoluble matter extracted from the cane juice by filtration. Filter mud is high in nutrient and is used as a soil ameliorant by farmers.

Juice 
Cane juice comprises water, dissolved sugar and other dissolved substances and some insoluble matter which make up molasses.

Magma 
The mixture of sugar crystals and syrup.

Massecuite 
The mixture of sugar crystals and liquor discharged from a vacuum pan.

Molasses 
The black syrup remaining after all commercially recoverable sugar has been removed from massecuite in the centrifugalling stage of the process.

Pol 
Polarisation is a measure of the concentration of sucrose present in solution.

Ratoon 
The cane plant is typically harvested in four or five consecutive seasons before being ploughed out in preparation for replant. The second and subsequent crops in the cycle are referred to as ratoon crops (ie. first ratoon, second ratoon, etc).

Raw Sugar 
The crystals of sugar, together with any coating of molasses, as recovered from massecuite.

Season 
The harvesting or crushing season typically extends between early June and late November.

Sugarcane Smut 
An exotic disease which can cause significant yield losses in susceptible sugarcane varieties but can be managed by planting resistant varieties. The disease was first discovered in the Queensland sugar industry in 2005.

STL 
Sugar Terminals Limited is the company which owns the industry's port-based infrastructure.

Syrup 
The concentrated sugar solution leaving the evaporators.

Vacuum Pan 
A process vessel in which sugar syrup is boiled under vacuum at relatively low temperature to produce massecuite.
